Frantoio Maddii's Minestra di pane Recipe

The bread soup is an ancient Tuscan recipe, handed down by our grandmothers.

A mix of vegetables, legumes and bread, strictly old, in fact this recipe was created to recover leftover food and not throw anything away.

Rich in tradition and passion, we present the recipe of our family, ingredients:

  • 1/2 kg potatoes
  • 1 bunch of Swiss chard
  • 1 kg of cannellini beans
  • 1 kg carrots
  • 1 celery heart
  • 1 lg onions
  • 6 courgettes
  • 750 g borlotti beans
  • 1 tube of tomato paste
  • EXTRA VIRGIN OLIVE OIL
  • one bunch of kale, one bunch of cabbage and one bunch of savoy cabbage
  • some chopped meat for the soffritto (celery, carrots, onion)
  • 1/2 kg of stale bread
